Asian kale slaw with edamame

I can have this kind of slaw everyday, I think the dressing is so fresh and super easy to make.


  • 1 bunch of kale, stems removed and shredded
  • 3-4 medium carrots, grated
  • 1 cup of edamame, shelled
  • 1 cup of Brussels sprouts, super thinly sliced
  • 1/3 cup of toasted sliced almonds
  • 3 green onions, chopped
  • 1-2 tbsp of sesame seeds
  • 1/4 cup of cilantro
  • Dressing: 1/4 cup of soy sauce, 2 limes, 1 tbsp of fresh grated ginger, 2 tbsp of rice vinegar, 2 tbsp of maple syrup, 1 tsp of sesame oil, 1 tbsp of olive oil


Finely shred the kale, transfer to a bowl add 1 tbsp of the rice vinery and 1 tsp of salt and massage it so it becomes more tender.

Add the Brussels sprouts, carrots and edamame.

Combine the dressing's ingredients in a jar, close the lid tightly and shake until emulsified.

Drizzle over the kale mix and toss. Add the green onions, almonds, sesame seeds and cilantro.
