I love all kind of asian salads, including this super easy one! I use a mandolin to have my cabbage really thin and it also saves time. I make my dressing in a food processor because I want my jalapeño and cilantro completely blended, but you can do it by hand and chop them small as well.

Ingredients

  • 1/2 red cabbage
  • 1 bunch of kale (or other greens)
  • 1/2 nappa cabbage ( or white cabbage works as well)
  • 2-3 carrots
  • 1/3 cup of toasted almonds
  • 1/3 cup of cilantro
  • 1 lime, zested and juiced
  • 1 tsp of sesame oil
  • 1 tsp of fresh grated ginger
  • 1/2 jalapeño
  • 1/3 cup of soy sauce
  • Optional toppings: edamame, sunflower seeds, green onions, sliced radishes,....

Directions

Thinly slice the cabbages and kale and grate the carrot and transfer to a large salad bowl.

In a food processor, combine the jalapeño, ginger, cilantro, soy sauce, sesame oil, lime zest and juice and pulse until blended.

Toss with the cabbage mix and add some salt and pepper to taste. Sprinkle toasted almonds and any other toppings I have listed as optional. In my opinion, the more the better :)
