Asparagus-Zucchini Frittata

Frittatas are a go to lunch on week-ends in my house. They are a good way to eat whatever veggies I have left from the week and are a family favorite!


  • 1 bunch of asparagus, roughly chopped
  • 1 zucchini cut into small cubes
  • 1 shallot , minced
  • 8 eggs
  • Salt and pepper
  • 1-2 tbsp of olive oil


Preheat the oven at 375F.

Sauté the shallot, asparagus and zucchini with the oil on medium for a few minutes. Add some salt and pepper to taste.

Beat the eggs in a bowl and pour them over the veggies. Let it set for a few minutes and transfer to the oven until completely cooked,  for 15-20 minutes.
