Asparagus with soft boiled egg

When asparagus are in season, they are super tender and almost sweet. I love the white ones particularly and they go very well with a soft boiled egg!

Remove the ends of the asparagus. Boil a medium pot of water and cook the asparagus for 2-3 minutes until tender. Remove and put aside.
In a pot with cold water, place the eggs and bring to a boil. As soon as the water starts to boil, time 3 minutes. When done rinse the eggs under cold water, this will stop them from coking more. Peel them carefully so you don't break the yolk.
Plate the asparagus, sprinkle some breadcrumbs and chopped parsley. Drizzle some olive oil, salt and pepper. Place the eggs on top, let the yolk run over and enjoy!
