Eggplant and fennel stew

This is really delicious as a side or even on its own for a lighter meal. Served with quinoa, pasta or rice this is my ideal dinner because I just throw it all in the slow cooker and wait!


  • 1 large eggplant, cut into small cubes
  • 2 fennels, greens removed and cut into small cubes
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1/4 tsp of chili flakes
  • 1 (15oz) can of crushed tomatoes
  • 1 tsp of turmeric
  • 1 tsp of paprika
  • 1 tsp of cumin
  • Salt and pepper to taste


Put all the ingredients into the slow cooker and mix until nicely combined. Set on high for 4 hours and done!
