Baked eggs with beans and tomatoes

I love making these kind of dish for brunch. It is super easy to put together, you can always tweak the recipe depending on the ingredients you have at hand and it is always a success around here.


  • 1 yellow onion, chopped
  • 5 eggs
  • 1 can of tomatoes ( I used cherry tomatoes)
  • 1 can of beans ( I used cannellini)
  • 1-2 bunch of baby spinach
  • 5 large eggs
  • Salt and pepper


Preheat the oven at 350F.

In a large pan ( that can go in the oven) heat up 2 tbsp of olive oil and cook the onion until translucent ( 3-5 minutes). Add in the tomatoes, beans and spinach. Cook until spinach are wilted. Season with some salt and pepper ( and cayenne pepper if you like a little kick to it).

Gently make 5 little nests in your pan and break the eggs in there. Transfer to the oven until the eggs are cooked to your liking. I like mines with a runny yolk, so I left them in for 8-10 minutes. The whites were just set and yolk still smooth and runny.
