Cooking the fish in all these amazing spices and sauce gives it tremendous flavor. It makes the fish flaky, tender and perfectly cooked! You can serve it with couscous, quinoa, rice or even potatoes.....

Ingredients

  • 5 6-8oz small pieces of white fish (cod, halibut
  • 1 tsp of cumin
  • 1 tsp of paprika
  • 1 tsp of coriander
  • 1 pinch of chili flakes
  • 1/3 cup of raisins (trust me on this!!!)
  • 2 tbsp of white wine
  • 3 cups of diced tomatoes
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 3 tbsp of olive oil

Directions

Heat up the olive oil and sauté the garlic and onion for 1-2 minutes, add all the spices until fragrant, deglaze with the wine.
Add the tomato sauce and raisins. Nestle the fish in the sauce, cover and simmer for 8-10 minutes until the fish is cooked through and flaky.

    I can’t get any type of white fish where I’m at in Hawaii. Can I use salmon???

      For sure, I think this recipe goes with any kind fish. Depending on the tickness you might have to cook it a bit longer.
