Makes 6 medium size oat cups

These make the easiest and most delicious breakfast, especially when you make them ahead of time and simply reheat them when you need... I store them in my freezer and thaw them overnight. My favorite way to eat them is with a drizzle of maple syrup and nut butter.

Ingredients

  • 1 cup of oats
  • 2 tbsp of chia seeds
  • 1 banana
  • 3/4 cup of hot water
  • 1/4 cup of nut milk
  • 1 tsp of vanilla
  • 2 tbsp of maple syrup
  • 1 tsp of raw cacao powder and 1/3 cup of chocolate chips
  • or 1/3 cup of freeze dried berries and 1/3 cup of fresh raspberries

Directions

Preheat the oven at 350F and line up a muffin tray with baking paper cups.

Combine the oats, chia seeds, mashed banana and hot water. Mix and wait until all the water is absorbed. Add in the milk, vanilla and maple syrup and stir.

Depending if you want chocolate or mixed berries add in the cacao an chocolate chips of freeze dried berries and raspberries. Or you can divide batter in 2 and do both ( thats what I did).

Spoon the batter  in the muffin cups and bake for 25-30 minutes, until firm and cooked through. Leave to cool for a bit before removing from the pan. Enjoy right away or store in an airtight container in the fridge or in Ziplog bags in the freezer.
