Baked pumpkin spiced oat cake

This is the ultimate comfort food for a colder week-end breakfast... Plus it is healthy and delicious!!
Preheat the oven at 375F and grease 4 ramekins.
Place all the ingredients except the toppings in a food processor and blend until smooth.
Pour batter into the ramekins and add in all the toppings that you like.
Bake for 20-25 minutes until set and firm to the touch. Carefully remove from the oven and let cool for a few minutes. Enjoy with some maple syrup or nut butter... I like making extra so I can keep them in the fridge for another day.
