Banana bread with cinnamon swirl

My family can never get enough of banana bread. Since they love cinnamon as well, which I always add in anyway, I thought it would be fun to do a swirl for extra flavor. It turned out really delicious, so here you go!

Ingredients

  • 3 bananas
  • 1/3 cup of coconut oil, melted (or butter)
  • 1/2 cup of maple syrup
  • 1/4 cup of plant based milk
  • 1 3/4 cup of flour (I used wholewheat)
  • 1 tsp of baking soda
  • 1/2 tsp of salt
  • 1 tbsp of vanilla extract
  • 1 tsp of cinnamon
  • 2 eggs
  • Swirl: 2 tbsp of sugar and 1 tsp of cinnamon

Directions

Preheat the oven at 325F and grease a bread pan.

In a large bowl mash the bananas and add the eggs, one at a time mixing well in between. Add the maple syrup, melted coconut oil, vanilla and milk and stir until smooth.

Sprinkle in the dry ingredients and mix until just combined. Transfer to the greased pan.

Combine the swirl ingredients and sprinkle on top of the batter. Using the tip of a knife swirl it around so it mixes in a bit with the bread  batter but still stays on top and makes a nice pattern.

Bake for 50-60 minutes or until a tooth pick comes out clean. Remove fro the oven and leave to cool for 10-15 minutes.
