I think this is the easiest banana bread recipe ever, I only need to use 1 bowl and it goes into the oven! We are banana eaters in this house, and I always end with some that are a bit to ripe to eat but perfect for bread..... I find it an easy way also to add tons of superfoods without anyone noticing it or complaining about it!!!! This is totally optional but worth it!
Preheat the oven at 375F and grease a rectangular loaf pan. Peel and mash the bananas and add the coconut oil. Stir in the maple syrup, beaten egg, vanilla, baking soda, salt and cinnamon. Mix in the flour until just combined. Add any of the options above at this point ( walnuts, chia seeds,...)
Pour the batter into the pan and bake for 45-50 minutes until completely baked in the center. Insert a toothpick or knife and if it comes out clean, then it is ready! Let it cool completely on a rack and remove for the pan!
