These are great for an easy make ahead nutritious delicious breakfast. I know that when school in on, online or not, I need something easy to feed the kids that will help them start the day with all the energy they need and something they like (otherwise they won't eat it and we will argue about it....) These passed the test and my kids all likedthem, so it is a winner!

Ingredients

  • 3 bananas
  • 3 tbsp of coconut oil, melted
  • 1 cup of spelt flour (or regular flour)
  • 3/4 cup fo oat bran (or oat flour)
  • 3/4 cup of coconut sugar
  • 3 tbsp of cocoa powder
  • 1 cup of chocolate chips
  • 1 tsp of baking soda
  • 1/2 tsp of baking powder
  • 3/4 cup of almond milk
  • 1 pinch of salt
  • 1 dozen of walnuts, coarsely chopped

Directions

Preheat the oven at 350F.

In a large bowl, mash the bananas. Add in all the ingredients (reserve 2 tbsp of chocolate chips) but the walnuts, mix in until nicely combined.

Line a muffin tray with baking paper cups. Scoop in the batter and top with some walnuts and chocolate chips.

Bake for 22-25 minutes or until a toothpick comes out clean (meaning no batter on it but you might have some melted chocolate which is ok).

They keep for a couple of days or store them in the freezer for a couple of weeks and take them out the night before for a quick breakfast and leave them at room temperature. These should make everyone happy in the house!!!
