Banana Oat Muffins

Week days breakfasts are always a bit chaotic around here. We have little time, kids are not always hungry and they are not are sure what to eat,... My mission is to try and have them absorb max nutrients easily in a short amount of time and it has to taste good... These do the trick. I prepare them the day before, they keep for a few days in an airtight container and they also freeze well!
Preheat the oven at 350F.
Combine the mash bananas, milk, maple syrup, vanilla and eggs and mix until smooth. Fold in all the dry ingredients. If you want go with the nuts, or seeds or fruits, add them in now.
Scoop in a muffin tin, lined with baking cups and put in the oven for 20-25 minutes, until a toothpick comes out clean!
