My husband's favorite breakfast is french toast and he loves banana... So we thought we would make a combo fro father's day breakfast and it was a huge success! Super easy, it can be made a day ahead, it does not require sweetener, since bananas add the right touch in here. It is smooth, tasty, crunchy as well, it is just a perfect balance!


  • 1 challah bread ( or brioche, or whatever bread you like or have)
  • 6 eggs
  • 1 cup of milk
  • 1 cup of ricotta
  • 1 tbsp of vanilla extract
  • 1 tsp of cinnamon
  • 3 bananas
  • Toppings: sliced almond, powder sugar


Grease a baking dish with coconut oil or butter.

Cut the bread in rough cubes. In a large bowl mix together the eggs, the milk, ricotta, vanilla, cinnamon and 1 mashed banana until smooth and nicely combined.

Add the bread to the bowl and toss until everything is coated together.

Transfer to the baking dish add the remaining two bananas sliced and leave it to rest for 1 hour (or covered in the fridge overnight) so the bread has time to soak it in.

Preheat the oven at 350F and bake for 40-45 minutes. If you see that the top gets browned too quickly cover with foil for the remaining of time.

Enjoy with sliced almonds, powder sugar or maple syrup.
