Makes 1 bread

I love both flavors so I thought why not combine them! I did some research and realized other people had the idea before me ( obviously) but none of the recipes I found were to my satisfaction... So I combined some and tweaked them to come up with this! Really yummy!

Ingredients

  • 1 1/2 cup of flour
  • 1 tps of baking powder
  • 1 tsp of baking soda
  • 1 pinch of salt
  • 1 tsp of cinnamon
  • 1 tsp of vanilla
  • 1/3 cup of coconut oil (melted at room temperature)
  • 1/2 cup of organic sugar
  • 3 bananas
  • 1 small zucchini
  • 1 egg
  • 1/2 cup of walnuts, plus 1/4 to sprinkle on top

Directions

Preheat the ove at 350F.

Combine all the dried ingredients into a bowl. Mash up the bananas and add the melted oil, egg, sugar and vanilla. Fold into the dried ingredients ( be careful no to over mix it) until just combined.

Grate the zucchini and squeeze the liquid out. Add into the batter as well as the nuts.

Transfer to a greased bread pan and top with the rest of the walnuts. I also sprinkled some cinnamon sugar for extra sweetness, but this is optional.

Bake for 50-55 minutes or until a toothpick comes out clean. Leave it to cool before removing from the pan and enjoy! I love drizzling some nut butter on a warm slice for breakfast!!
