Beet Tart with Crumbled Feta

Makes 1 Tart

I use store bought pie dough which transform this into a super easy dish... It looks super pretty and is great for brunch with a mixed green salad on the side or as an appetizer...


  • 1 store bought frozen pie dough, thawed
  • 2 medium yellow beets
  • 2 medium red beets
  • 1 tbsp of fresh thyme
  • 2 tbsp of olive oil
  • 1/2 cup of feta cheese, crumbled
  • Salt and pepper


Preheat the oven at 400F.

Place the dough on a lined baking sheet. Peel the beets and thinly slice them (I used a mandoline).

Starting on the outer part of the dough start placing the beet slices ( leaving 1/2 inch border to be able to fold in the dough) in a circle. Start with the yellow beets and finish with the red ones in the center.

Fold in the borders of the dough to cover a little bit the beets. Sprinkle the fresh thyme all over, drizzle the olive oil and add the feta, some salt and pepper.

Bake for 35-40 minutes until the broder of the tart are golden brown and the beets are cooked.

You can always add more fresh feta and fresh chopped herbs, it will give it extra flavor.
