Broiled grouper with fresh Peruvian inspired salsa

This would be delicious on a variety of fish, chicken, even steak maybe cauliflower steak or simply with chips!!! I think this salsa and its variations is going to be a staple in my kitchen this summer!

Ingredients

  • 5 medium filets of grouper
  • 4-5 small mixed sweet peppers
  • 1 jalapeƱo
  • 1 small cucumber
  • 1 lime
  • 1/4 of purple onion
  • 1/4 cup of cilantro
  • 1 tbsp of flaky salt
  • Fish seasoning: Olive oil, garlic granules, chili powder, slat and pepper

Directions

Preheat your oven on high. Place the fish in an oven safe dish. Brush with olive oil and sprinkle a bit of each seasoning. Broil the fish for 12-15 minutes until cooked through and flaky. Timing here will depend on the thickness of your fish and also if it was at room temperature or not.

For the salsa cut every vegetable into small cubes. I removed all the seeds from the peppers so it would no be too spicy for my kids. Juice the lime and the finely chopped cilantro, 1-2 tbsp of olive oil and the flaky salt. Toss and leave the rest while the fish finishes cooking.

Who the fish is cooked spoon on top of it and enjoy.

Next time I make it I will prepare extra and keep in the fridge fro w yea days so I can enjoy it with chips!!
