Broiled Tilapia with 2 sauces

Tilapia is a mild flavor fish, so a little drizzle of a sauce on top goes a long way. I am making it here with a herb vinaigrette and tomato basil salsa. Both are really easy to prepare and can be used on veggies, combined, eaten separately,... you choose!


  • 5 Tilapia filets
  • 2 tbsp and 1 cup of olive oil
  • 2 lemons ( 1 sliced, 1 juiced)
  • 1 cup of cherry tomatoes
  • 1 bunch of fresh basil leaves
  • 1 bunch of fresh cilantro
  • 1 bunch of fresh parsley
  • 1 garlic clove
  • Salt and peper


Tun on the oven on broil. Prepare the fish by placing it on a lined baking sheet and drizzle olive oil, salt and pepper. Slice 1 of the lemon and arrange on top the fish.

Put in the oven for 7-10 minutes until flaky and cooked through.

Meanwhile prepare the sauces.

Italian Tomato Salsa:

Cut the tomatoes in 4, place in a large bowl and add the other 2 tbsp of olive oil, some salt and pepper and the basil leaves, finely chopped. Mix nicely together and leave it on the side.

Herb Vinaigrette:

Put the cilantro, parsley, 1 cup of olive oil, remaining lemon (juiced), garlic, some salt and pepper and process until all nicely chopped and combined.

When the fish is cooked serve with either or not sauces and enjoy.

These sauces will go with so many things : fish, even red meat or chicken. I have used it for pasta even and veggies!
