I love chocolate and baking, so this recipe turns out to be right in my alley. Today my kids asked for brownies, I have been recipe testing for a while and I think this comes close to my expectations. Feel free to add nuts or dried fruits in your brownies... My kids do not like it so I keep it plain.


  • 3/4 cup whole wheat flour (or gluten free oat flour works well)
  • 2/3 cup honey (or maple syrup)
  • 8 oz of dark chocolate or semi sweet chocolate
  • 3 eggs
  • 1/2 cup coconut oil (or butter)
  • 2 tsp vanilla extract


Preheat oven to 350 F. Grease one 8-inch cake pan and/or use parchment paper. Melt the coconut oil and chocolate together until smooth. I do it in the microwave 30 seconds at a time, mix and keep going until completely melted.

Whisk in flour, honey and vanilla extract together in a large bowl. Add the eggs on at a time. Pour into prepared pan and smooth top.

Bake in the preheated oven until the center is set and edges pull away from sides of the pan, 20 to 25 minutes. A toothpick inserted into the center should be clean or have a few moist crumbs attached.
