Makes 12-15 mini meatballs

My kids always love having meatballs, so I have a few variations of them on the blog and here is new one that I think they'll enjoy a lot. These are super easy, they have a nice kick to it and since I add maple syrup, it balances nicely the flavors and mellows down the spiciness. You can always add more chili sauce if you want extra spicy!!

Ingredients

  • 1 lb of ground chicken
  • 1 celery stalk, finely chopped
  • 4 tbsp of chili sauce
  • 2 tbs of maple syrup
  • 1 egg
  • 1/4 cup of breadcrumbs (I used cauliflower crumbs)
  • 1/2 tsp of garlic powder
  • 1 tsp of veggie seasoning ( I used everything but ht leftover from TJ, but something like Herbamare works as well)
  • Salt and pepper
  • 2-3 tbsp of avocado oil

Directions

In a large mixing bowl, combine the chicken, celery,  egg, sauce, maple syrup, seasonings and breadcrumbs. I added 1 tsp of salt and 1/2 tsp of pepper. Using two works just mix it until nicely combined and homogenous.

I take my ice cream scooper to form the meatballs, this helps having the same size plus it goes really fast.

Cooke them in avocado oil for 2-3 minted on each sides. Keep turning them until they have a nice golden brown color all around and are cooked through (165F inside temperature).

I served these with a fried rice and roasted broccoli.
