This is the kind of lunch that I always crave on week-ends. Frittata and quiches as well... I love the warmth and comforting feeling of such meals filled with veggies plus I have so much fun pairing flavors and trying out new things.

Preheat the oven at 425F.
Arrange the pie dough on a lined baking sheet. Thinly slice the squash and toss with the olive oil, fresh herbs, some salt and pepper. Arrange the slices around on the dough leaving a 1 inch border all around. Sprinkle the goat cheese and fold the border over towards the center.
Drizzle a bit more olive oil and some slat and pepper. Bruch the crust wit the eggs wash and also add some salt.
Bake for 35-40 minutes or until the crust gets a nice golden brown color and crispy. Enjoy with a leafy green salad or on its own!!
