Carrot and white bean soup with warming turmeric

I made this on a rainy cold day and it was exactly what everyone was craving... It was so satisfying and since turmeric is a great anti-inflammatory, it was the perfect way to chase the potential colds away.....

Ingredients

  • 2 cups of mirepoix (1 onion, 2 carrots, 2 celery stalks all chopped)
  • 2lbs of carrots
  • 1 16oz can of cannellini white beans, drained
  • 1 1/2 tsp of turmeric
  • 1/2 tsp of paprika
  • 1/2 tsp of Herbamare veggie salt
  • 5-6 cups of veggie or chicken stock
  • 1/2 cup of roasted salted pistachios (to serve)
  • 1/2 cup of chopped fresh parsley (to serve)
  • 2-3 tbsp of olive oil

Directions

Peel and chop the carrots.

Sauté the mirepoix with the olive oil for 5-7 minutes on medium. Add the spices and stir until fragrant then toss in the chopped carrots. Cook for another minute or two before pouring the stock and the beans. Bring to a boil and then simmer until veggies are tender and cooked, for 10-12 minutes (this depends on the size and thickness of your carrots. So if they are on the smaller size check before and if they tend to be bigger leave them a bit longer. You should be able to easily pierce a fork through it).

Purée the soup using an immersion blender. I like this soup with some chunks of veggies in there, it really creates and comforting texture. Taste and adapt seasoning. Serve and add some  chopped pistachios and parsley on each bowl. I also made some easy parmesan croutons for the boys to give it a nice crunch!
