Carrot Cake Oatmeal

I had fun with this around Easter as I wanted to be in season. I have to admit that this has become one of my go to breakfast by now, it is so good!
In a medium-sized pot over medium heat, whisk together the almond milk, water, maple syrup, cinnamon, ginger, vanilla and a pinch of salt until smooth. Stir in the carrots and oats. Bring to a boil and then let it simmer for a couple of minutes until all the flavors blend nicely together and the oats are cooked. You may have to add more milk depending on the consistency that you like.
Add any toppings you feel like, I went for shredded coconut and pecans.
