Makes 1 medium jar

I tried this yesterday with a "vegetarian sushi" bowl and it was really good. The beauty of this is that you blend it all together so it only takes a couple of minutes to make.


  • 2 medium carrots, raw
  • 1 lime, juiced and zested
  • 1/3 cup of rice vinegar
  • 1/3 cup of olive oil
  • 1 inch piece of fresh ginger, peeled
  • 1 tsp of sesame oil
  • 1 tbsp of maple syrup
  • Salt and pepper to taste


Place all the ingredients in a powerful blender (like a Vitamix) and blend until completely smooth with no remaining pieces of carrots left.

Drizzle on your salad or on my "vegetarian sushi" bowl. Transfer the rest to a jar with a lid and keep in the fridge for a week or two.
