I eat cauliflower in every form and all the time, I just love it! This soup is so smooth and creamy, it is absolutely divine!! I love the beans here because they add a nice texture and proteins.

Ingredients

  • 1 cauliflower head, washed and cut into florets
  • 1 14oz can of white beans, drained and rinsed
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 2 celery stalks, chopped
  • 5 cups of veggie stock
  • 1-2 sprig of fresh thyme
  • Optional: 2 slices of turkey bacon, 1 bunch of fresh sage leaves
  • 2-3 tsp o olive oil
  • Salt and pepper to taste

Directions

Chop the cauliflower into florets. Heat the olive oil in a medium pot over medium heat. Add onion, celery and sauté for about 5 minutes until fragrant.
Add the cauliflower and garlic, and stir to coat. Add beans, broth and thyme and bring to a simmer, then reduce heat to low. Simmer on low for about 15 - 18 minutes, or until cauliflower is soft.
Taste and season with salt and  pepper.
Purée with an immersion blender (or slightly cool and blend in a stand blender).
Cook the turkey bacon and sage in a pan until crispy, chop it all super small and sprinkle on top of the soup.
