Cauliflower and white bean soup
Nov 3 2020
I eat cauliflower in every form and all the time, I just love it! This soup is so smooth and creamy, it is absolutely divine!! I love the beans here because they add a nice texture and proteins.
Chop the cauliflower into florets. Heat the olive oil in a medium pot over medium heat. Add onion, celery and sauté for about 5 minutes until fragrant.
Add the cauliflower and garlic, and stir to coat. Add beans, broth and thyme and bring to a simmer, then reduce heat to low. Simmer on low for about 15 - 18 minutes, or until cauliflower is soft.
Taste and season with salt and pepper.
Purée with an immersion blender (or slightly cool and blend in a stand blender).
Cook the turkey bacon and sage in a pan until crispy, chop it all super small and sprinkle on top of the soup.
This sounds good and I love how I was brought to the recipe so easily through your link. I’m looking forward to seeing your page grow!
Thank you, I hope you enjoy it. I am always here and happy to help if you have any question 🙂
