Cauliflower Hash and Eggs

This is a healthier and lighter version of traditional hash brown and it tastes even better!! Takes little time to put together and makes a great breakfast or brunch.
Sauté the onion with the olive oil for 1-2 minutes, add the cauliflower and cook for 1-2 minutes stirring constantly so it does not burn. Add the stock, paprika, chili flakes, the kale, cover and cook for 4-5 minutes until cauliflower is cooked.
Make little nests and crack the eggs in them, cover and cook on low for 2-3 more minutes for soft boil eggs. ( 4-5 for hard boil eggs)
Or your can always cook the eggs separately and add them on the plate directly.
Plate and add the green onions and parsley and adapt seasoning with salt and pepper.
