Cauliflower rice tabbouleh

You can make your own cauliflower rice, or buy it frozen at your supermarket for convenience.


  • 3-4 cups of caulirice (I am using TJ frozen caulirice, thawed)
  • 1 cup of chopped cucumber
  • 1 cup of cherry tomatoes, cut in 2
  • 3 scallions
  • 1/3 cup of fresh mint
  • 1/3 cup of fresh parsley
  • 1 large lemon, juiced and zested
  • 1 tsp of apple cider vinegar
  • 2-3 tbsp of olive oil
  • Salt and pepper
  • Toppings: feta, olives, pinenuts, curants, ...


Place rice in a large bowl. Add all vegetables and  chopped fresh herbs, and mix well.
Whisk together lemon juice, vinegar, oil, salt and pepper. Pour dressing over vegetable mixture and stir to coat. Add more salt and lemon pepper to taste.

Add any toppings you want and enjoy!
