Cauliflower steaks with pesto

I always try to find new ways to bring veggies into our daily meals.... I have to say that the kids were very skeptical about this one but they loved it! If you use store bought pesto, this is like the easiest recipe ever!!!

Ingredients

  • 1 medium cauliflower head, cleaned
  • 1/2 cup of pesto sauce (homemade or store bought works great)
  • 1 cup of cherry tomatoes
  • 2-3 tbsp of olive oil
  • 1 tsp of paprika
  • Salt and pepper
  • Parmesan cheese

Directions

Preheat the oven at 400F. Cut the cauliflower in the middle and try to cut 2 thick slices/steaks out of it on each side. You'll have bits and pieces as well but that is perfect. Brush it all with olive oil and sprinkle the paprika, salt and pepper and roast for 30 minutes on a lined baking sheet (or until tender).

On another baking sheet sprinkle the tomatoes with 1 tbsp of olive oil, salt and pepper and roast as well. Or you could use regular tomato sauce here or even simply raw fresh tomatoes as well.

If you make your own pesto, prepare it now otherwise just wait patiently for veggies to cook.

Once the cauliflower is cooked, spoon some of the pesto on each piece as well as some of the roasted tomatoes. Grate some fresh parmesan on top and sprinkle some salt and pepper. You could also add some fresh basil and toasted pine nuts for extra flavor and texture!
