Caulirice is a huge hit in my house. I love it because it is a good way to get the kids to eat more veggies and it is one of my fave side dish ever. I made a pilaf version of it today by simply adding carrots and edamame while cooking it. It is fun to play around with this and add different veggies, nuts and herbs to it...

Wash the cauliflower, cut into florets and put in food processor and pulse until it looks like small rice grains.
Heat up 1-2 tbsp of avocado oil and add the garlic and ginger and cook for a minute or 2. Add the carrots and caulirice and stir. I find that a good way to cook this is to add a couple of tbsp of stock or water and let it steam. When the liquid has evaporated add the edamame, some salt and pepper to taste and enjoy.
You could add some fresh cilantro or parsley, some soy sauce, some cashews, feel free to experiment!
