
Celery root leek soup

Soup is the easiest way to prepare dinner in a rush. You get all the nutrients from the veggies, it tastes so good and you can add toasted quinoa, rice, or even beans to make it a more complete meal!!

Directions
Sauté the leeks and onion with the olive oil for 5-7 minutes. Make sure to stir often so it does not burn.
Add the celery root and thyme and keep on sautéing the veggies for another 7-9 minutes, this will give it all the flavor.
Add the stock, bring to a boil and simmer for 15-20 minutes until veggies are cooked through and tender. Either use an immersion blender or transfer to blender and purée until smooth.
Taste and adjust the seasoning and enjoy!
