Chestnut apple soup

This is a really interesting combo of flavors! If you haven't tried it, I highly recommend it, plus it is so easy!
Heat the olive oil and sauté the mirepoix for 5-10 minutes until translucent (this is what gives tons of flavor to the soup).
Add the chestnuts, apples and stock, bring to a boil and simmer for 15 minutes. Transfer to a blender and purée until smooth.
Serve and garnish with some chives and greek yogurt. Sometimes I will keep some chestnuts whole, roughly chopped them and sprinkle on the soup as well, it adds texture.
