I am making the most of peach season as long as possible with the super easy and delicious chicken Cobb inspired salad. I am using leftover chicken here which makes it even easier.

Ingredients

  • 1 large romaine lettuce
  • 1 heriloom tomato
  • 3 slices of turkey bacon
  • 2 chicken breasts cooked
  • 2 peaches
  • 3 boiled eggs
  • Vinaigrette: 1 small shallow, 1 tsp of dijon, 1 tsp of AVC 1 tsp of maple syrup, 1/4 cup of olive oil, salt and pepper

Directions

Wash and chop the lettuce. Wash the tomato and the peaches. Boil the eggs for 5 minutes if you haven't done so. Also grill the chicken (simply seasoned with salt and pepper on each side) if you haven't done it yet. Cook the bacon according to package instructions.

Place the lettuce on a serving plate, slice the tomato and peaches and add to it. Slice the chicken and bacon and arrange on the plate.

Combine the vinaigrette's ingredients in a jar and shake until emulsified. Drizzle on the salad and finally add the boil eggs. I always loving finishing a salad with freshly chopped herbs when I have them, it really adds another dimension.
