Chicken Lettuce Cups

These are really yummy and take a few minutes to assemble. It is family friendly because kids can have it on rice and I have in lettuce cups. Plus it can also serve a crowd.
Sauté the carrots, celery, garlic, shallot and ginger with 1-2 tbsp of oil ( coconut works well here). Add the chicken and keep on cooking for 5-6 minutes until the chicken is cooked through.
Add the soy sauce and sesame oil. Serve on a bowl of rice and add some cashews and cilantro or simply serve it in lettuce cups with same toppings!
