Chicken mushroom and orzo

This gets all done in one skillet and gives an easy dinner packed with delicious flavors.


  • 5 chicken thighs, skin on
  • 2-3 tbsp of olive oil
  • 2 garlic cloves, minced
  • 1 shallot, minced
  • 1 cup of mushrooms, whipped clean ad sliced (I used cremini)
  • 1 cup of orzo
  • 2 1/2 cups of stock
  • 2 sprigs of fresh thyme


Preheat the oven at 375F.

Heat up 2 tbsp of olive oil and cook the chicken for 2-3 minutes on each side until golden brown ad season generously.

Remove to a plate and add the garlic and shallots with the rest of the oil. After 3 minutes add the orzo and toss until everything is coated. Do the same with the mushrooms.

Add the stock and thyme and nestle the chicken back in and cook for 25-30 minutes or until the chicken reaches 165F inside temperature.

When the chicken is ready, serve and  maybe grate some fresh parmesan on top.
