Ramen are one of the top 3 favorite meal in my house. I try to make them different every time, here was with ground chicken and it it was so delicious that I had to share and show you how easy it is to prepare. Ramen are so versatile you can add or omit whatever you feel like. The base is the broth and noodles, then you can add raw or cooked veggies, meat, tofu, eggs,....

Ingredients

  • 1lb ground chicken, dark meat
  • 1 10 oz pack of ramen (of your choice, there are so many out there)
  • 2 garlic cloves, minced
  • 1 tbsp of fresh grated ginger
  • 2-3 tbsp of soy sauce
  • 1-2 cups of frozen spinach thawed
  • 5 boiled eggs
  • 1 cup of fresh corn ( I used raw here, beach it is in season and super sweet, frozen is good as well)
  • 1 cup of roasted veggies ( I used brussels sprouts and mushrooms)
  • 3-4 cups of broth

Directions

Sauté the garlic and ginger with 1-2 tbs of avocado oil until fragrant. Add the meat and toss until cooked through. Add the soy sauce and maybe a dash of pepper.

Cooker the ramen according to packaging instructions. Heat the broth until simmering.

Assemble the bowls by starting with the ramen, some chicken, some of the veggies, finishing with the broth and the boiled egg cut in 2. I like to sprinkle some green onions and sesame seeds to make it look pretty and add more flavor to it.
