Chicken sausage, eggplant and pasta bake

This a super easy meal, very versatile that you can adapt and add more or take way as well. For example you can use whatever ground meat or sausages you want or none at all. You could add mushroom here as well... Or even beans!!!


  • 1 bag of short pasta
  • 4 chicken sausages
  • 1 medium eggplant
  • 1 small zucchini
  • 1 medium onion
  • 1 24 oz jar of tomato sauce
  • 1 cup of mixed Italian grated cheese
  • 2-3 tbsp of olive oil


Cook the pasta according to packaging instructions.

Wash the eggplant and zucchini and chop them into bite size cubes (no need to peel the veggies). Mince the onion as well.

In an oven safe large pan ( I used a cast iron) heat up the olive oil and sauté the onion with the zucchini and eggplant for 5-7 minutes.

Cut the sausages and add to the veggies, toss until meat is cooked through. Add the sauce and the pasta until combined, taste and adapt seasoning. The vegetables can be a bit blend and also depending on which sauce you use, you will probably need to season with salt and pepper.  Sprinkle the cheese and boil for 3-5 minutes until golden brown and bubbly.
