Chicken Slouvaki with tomato salad

I've enjoyed these during my summer in Greece so much that I had to come up with my version back home. For the perfect combination, serve it with a fresh tomato salad, some pitta bread and tzatziki sauce.


  • 1lb of chicken breast, cut into cubes
  • 1 lemon zested and juiced
  • 1/3 cup of olive oil
  • 1 tbsp of oregano
  • 1 tsp of rosemary
  • 2 garlic cloves
  • Salt and pepper
  • Tomato salad: 2 cups of heirloom tomato, 1 shallot, lemon juice, salt, pepper and fresh basil
  • Option: pitta bread, cucumbers, tzatziki
  • Skewers


Combine the lemon juice and zest, herbs, garlic, some salt and pepper in a blender and process. Pour over the chicken pieces and leave to marinade for a little while.

Cut the tomatoes and and shallot, toss together with 1-2 tbs of fresh lemon juice and 2-3 tbsp of olive oil. Season to taste and add some fresh basil.

Arrange the chicken on the skewers and grill for 3-4 minutes on each side until gold brown and cooked through.

Serve with the tomaotes, the pitta bread and some tzatziki on the side.
