Chicken with Corn and Avocado Salsa

Nothing says more summer to me than corn and avocado together!!! This salad is so fresh and balances perfectly well the spices of the chicken.


  • 5 thin chicken breasts
  • 1 tsp of paprika
  • 1 tsp of garlic powder
  • 1/2 tsp of salt and pepper
  • 3 tbsp of olive oil
  • 1 ear corn, grilled or 3/4 cup frozen thawed
  • 1 cup of cherry tomatoes, cut in 2
  • 1/2 yellow pepper, cut in small pieces
  • 1/2 red onion, chopped
  • 1 avocado, peeled and cut in small cubes
  • 1/3 cup of fresh cilantro, chopped
  • 1 lime, zested and juiced


Combine the spices together and rub the chicken breast. Heat 2 tbsp of oil and cook the chicken for 4-5 minutes on each side until golden brown.

Toss together the corn, tomatoes, bell pepper, avocado, onion, cilantro, lime zest and juice and 2 tbsp of olive oil, and some salt and pepper to taste. I think that a dash of chili flakes or cayenne pepper would be great here if you like spicy!

Plate the chicken and spoon the salsa on top and enjoy!!
