This is a super quick and delicious lunch or breakfast.... It is a bit spicy so you have to be up for that, the addition of avocado and cucumber creates a really nice balance of textures and flavors.

Ingredients

  • 2 eggs
  • 1 tbsp of chili oil (of choice, I used the Trader Joe's one)
  • 1 cup of cooked rice or caulirice
  • 1/2 avocado
  • 1 small Persian cucumber
  • 1-2 tbsp of soy sauce
  • 1 green onion
  • 1 tsp of sesame seeds
  • 1 drizzle of sesame oil
  • Optional: seaweed sheets

Directions

Heat up a small pan and add the chili oil and spread it out. Crack the 2 eggs and cook on high for 2-3 minutes. Turn off the heat and cover for another minute s it steams and cook the top.

Meanwhile heat up the rice, cut and slice the avocado and cucumber and arrange in a bowl. Top with the eggs and drizzle the soy sauce and sesame oil. Sprinkle the sesame seeds and chopped green onion and enjoy with the seaweed sheets or on it sown.
