Chilled Cucumber and Avocado Soup

I’ve always been a huge fan of soups. It has all the nutrients and vitamins you need. It is also an easy way to make my kids eat their veggies easily. Summertime is not the best time to eat soup, and they can only gazpacho once in a while… So I try tons of different combos and not all are winners.

This one was a huge hit for the entire family!

Ingredients

  • 3 cucumbers (peeled, seeds removed ad chopped)
  • 2 avocados, chopped
  • 3 tomatillos, chopped
  • 1 shallot, chopped
  • Zest and juice form 1 lime
  • 1 cup of water
  • 1/2 jalapeño (I removed the seeds because my kids don’t like when it is too spicy)
  • A bunch of cilantro, chopped
  • Salt and pepper

Directions

Garnish: pistachios, homemade croutons, chopped cucumber, chopped avocados, chopped cherry tomatoes,…. basically anything you feel like adding on top!

Put all the ingredients in a blender, and blend until smooth, you may have to add more water, depending on how you like the consistency. Refrigerate for 1 hour, it taste so much better when really cold.

Put all the toppings in small bowls and let everyone add what they feel like. My kids love that kind of dinner, it makes it fun for them to add toppings!!!
