Chimichurri Flank Steak

My kids love Chimichurri, I have no clue how they discovered it but they asked me to make that for diner the other night.... So I did! I like that I could prepare the sauce in advance and I just had to grill the steak last minute, so very easy!!!


  • 1 1/2 lb flank steak
  • 1 cup of fat parsley
  • 1/4 cup of cilantro
  • 1/2 cup of olive oil
  • 1/4 cup of red wine vinegar
  • 1/4 tsp of chili flakes
  • 1/2 tsp of cumin
  • 1 garlic clove
  • 3-4 green olives, pitted and chopped
  • Salt and pepper


Combine everything but the steak in a food processor and pulse until completely smooth. You can store in the fridge, just bring it to room temperature, like 30 minutes before you want to eat it.

Sprinkle the steak with salt and pepper, let it rest to room temperature and grill it for 2 minutes on each side to have a nice medium rare steak.

Slice it thinly and enjoy with the sauce!
