Makes 6-8 cookies

This is probably on of the easiest cookie recipe ever. I used coconut sugar and it taste like so if you don fancy it use regular cane sugar. The bet part of it is that you can eat it raw as well!!

Ingredients

  • 1/2 cup of coconut sugar
  • 3/4 cup of almond flour
  • 3/4 cup of wholewheat flour
  • 2/3 cup of oats
  • 1 tps of baking powder
  • 1 cup off chocolate chips
  • 7 tbsp of coconut oil, melted
  • 2 tbsp of milk
  • 1 tps of vanilla extract
  • 2/3 tsp of almond extract (optional but delicious)
  • 1 pinch of salt
  • Flaky salt to sprinkle of dough before baking (also optional but delicious)

Directions

Preheat the oven at 325F.

Combine the flours, sugar, oats and baking powder and whisk to eliminate the lumps. Add also the salt.

Pour the coconut oil, milk, both extracts and mix until it forms a dough. Add in the chocolate chip and stir to combine.

The best way here would be to chill the dough for 5-10 minutes so the cookies with keep their shape. I can never wait but I also don't mind not making perfectly round shape cookies, I am too impatient to eat them so I go for it right away.

Scoop the dough on a lined baking sheet and bake fro 1-12 minutes until golden brown!
