Chocolate lava cakes

I cannot believe that I have never posted this before.... It is one of my favorite dessert (I am a chocoholic) especially when you have the warm and gooey center melting with some vanilla or coconut ice cream. A spoon of happiness.... The good news is that a little goes a long way here so just a few bites should be enough to satisfy any sweet tooth...

Preheat the oven at 400F. Generously grease 5 ramekins, you can also dust them with either cocoa powder or sugar.
Melt the chocolate and butter in the microwave for approximately 2 minutes, 30 seconds at a time. Make sure to stir every time you get it out. Do it until it is smooth and glossy.
In a separate bowl, whisk together the eggs, vanilla and sugar. Add in the chocolate, flour and espresso powder. Don't over mix it.
Divide the batter into the ramekins and add in the peanut butter cup in the center. Bake for 10-12 minutes until the edges are set but the center still jiggly.
Remove from the oven and serve immediately with ice cream, whipped cream or simply with some powder sugar!
These will be your new holiday dessert, it is so good and rich and satisfying. I messed them up the first time and over baked them a bit and they tuner out to be delicious cakes.... So don't worry it it takes a few try to get the gooey center perfect!
When do you add 1/2 cup sugar?
