Makes 6-8 truffles

These take only a couple of minutes to make... The hard part is to be patient enough so they can cool down and be coated with chocolate before eating them all... Use whatever nut butter you have and like, I've made many versions of this using different kind every time and it turned out really delicious!

Ingredients

  • 1/2 cup of nut butter
  • 4-5 medium dates, at room temperature and pits removed
  • 1/2 cup of crushed toasted walnuts (pecans, almonds or peanuts all work as well)
  • 1/2 cup of chocolate chips
  • 1 tbsp of coconut oil

Directions

Make sure your dates are soft enough (if not, then pace them in microwave for 5 seconds at a time until they are). Place dates (pitted) and nut butter in a food processor and turn on until smooth and combined. You might have to scape the sides and start again a few times. Form small balls out of the paste and place in freezer until set (15-20mn).

Meanwhile melt the chocolate with coconut oil, 20 seconds at a time in the microwave and repeat until smooth, shiny and liquid.

Combine the chocolate with the crushed nuts and dip the nut-date balls in there. Place back in the freezer or fridge until the chocolate is set.

Store them in fridge for a couple of weeks and enjoy!
