Makes 8 small puddings

These are super creamy and so delicious. This is definitely a chocolate lover recipe. I have added raspberries here which creates a perfect balance of flavors!!!


  • 8oz of dark chocolate
  • 1 can of full fat coconut milk
  • 1 egg
  • 1 tsp vanilla extract
  • 1 tsp of instant coffee powder
  • 1 cup of fresh raspberries


Chop the chocolate and transfer to a blender. Heat up the coconut milk until it just starts to bubble. Pour milk over the chocolate, add the egg, vanilla and coffee and slowly process until chocolate is completely melted and smooth.

In small jars (or glasses) place 2-3 raspberries and gently pour the chocolate custard on top. Place in the fridge for at least 30 minutes until set. Decorate with a extra raspberry on top and enjoy.
