Makes 1 yule log

This has been one the best traditions as a kid: eating the yule log. It was always a surprise growing up to find out which flavor we would have. We would only have it at Christmas time which made it even more special.

This recipe is not the original yule log but a version of my childhood making it accessible for everyone and it does the trick! I have discovered when I moved here the chocolate wafers cake, and I thought that this would be the perfect start for a yule log recipe.  I am using lady fingers instead of the wafers and I have added cocoa powder to the whipped cream. I sprinkle chocolate curls on top et voila.

Ingredients

  • 4 1/2 cups heavy cream
  • 2-3 tbsp cocoa powder
  • 2 teaspoons pure vanilla extract
  • 2 (9-ounce) packages lady fingers
  • Milk-chocolate curls, for garnish
  • Powder sugar for garnish

Directions

Whip 3 cups of cream with the vanilla until soft peaks form and add the cocoa powder. I like it not too sweet, but feel free to add a little bit of maple syrup.

Assemble layers starting with the cream (it will help stabilize the cookies) then lady fingers. Keep going until you 3 of each finishing with the cream. Take a fork  and make lines all over the cake on the long side.

Cover with plastic wrap, and refrigerate for at least 4 hours and up to overnight. This will give time to the lady fingers to soften.

Garnish with chocolate curls and powder sugar. I always add these cute little cake decorations in the shape of mushrooms, deers, christmas tree and santa to make it more festive. I find them on the internet.
