I am using a food processor for this recipe which makes it super easy and only takes ac couple of minutes to prepare.
Using a food processor pulse until super fine the cauliflower, carrots, kale and radishes. Work in batches and only pulse4-5 times, you want it like veggie rice shaped not mushy.
Chop the romaine, and cut the avocado as well, assemble it all in a large mixing bowl. Drizzle a couple of tbsp of olive oil and juice of 1 lemon, season with salt and pepper toss, taste and adjust seasoning.
Top with some roasted nuts, maybe cheese and fresh herbs and enjoy.
