This is the kind of salad that I make for breakfast to get my kids to eat fruits. If the fruits stay whole in the fridge or on the counter, no one eats them besides me. When I peel and cut them and make them look pretty on a plate, my family eats the entire thing..... Since part of our new new resolution is to eat more fruits en veggies, I will make sure to do this on a daily basis.

Ingredients

  • 1 pink grapefruit
  • 1-2 oranges
  • 2 kiwis
  • 1/3 cup of pomegranate seeds
  • 1/4 of sliced roasted almonds

Directions

Peel the grapefruits and oranges. You can either slice thinly or cut the segments out (which takes a bit more time but is worth it). Peel the slice the kiwis and arrange on a plate. Sprinkle the pomegranate and almonds on top. You can always add some orange zest, a drizzle of maple syrup. Some granola would nice as well and a big dollop greek yogurt.  I mean, you see my point I can keep going here and adapt it in so many ways...
