This the perfect spring cake and is super easy to make! You can make it gluten free by using either only almond flour or subbing the regular flour for GF....


  • 1 1/2 cup of flour
  • 3/4 cup of almond flour
  • 3 eggs (room temp)
  • 1/2 tsp of baking powder
  • 1/2 cup of greek yogurt
  • 1/3 cup of olive oil (or coconut oil or butter)
  • 3 oranges, zested, peeled and thinly sliced
  • 1 tsp of vanilla
  • 1/2 tsp of almond extract
  • 1/2 tsp of salt
  • 3-4 tbsp of maple butter (melt together 3 tbsp of butter or coconut oil and maple syrup)
  • 1 pinch of salt
  • 1/2 cup of maple syrup (or other sweetener)


In a buttered lined up cake pan, drizzle the melted maple butter and arrange the citrus slices all around.

Combine all the dry ingredients together in a bowl.

In a another large bowl using a hand mixer combine the eggs, yogurt, oil, almond and vanilla extracts, maple syrup and orange zest. When it gets smooth slowly add in the dry ingredients without over mixing it.

Pour in the pan on top of the fruits and bake at 350F for 35-40 minutes or until a toothpick comes out clean. Let it cool for a little while before removing from the pan. Enjoy with greek yogurt, whipped cream or even ice cream.
