When I was a kid and my mom would add meatballs to the soup it was a real treat for us. She would make them super tiny and add lots of them with tiny little pasta as well.... I did not add pasta here because I wanted to keep it clean. This soup is bringing me straight back to when I was 10 years old....

Ingredients

  • 1 onion
  • 2 carrots
  • 2 celery stalks
  • 1 medium zucchini
  • 1 lb of ground chicken (or turkey)
  • 1 tsp of Italian seasoning
  • 1/2 tsp of oregano
  • 1/2 tsp of ground fennel seed
  • 4-5 cups of stock
  • 2-3 tsp of olive oil
  • 2-3 cups of baby spinach
  • Freshly grated parmesan to serve (optional)
  • 2 tbsp of pesto sauce (optional)

Directions

Peal and cut the onion, the carrots and celery in small pieces.

Heat up a large pot with the olive oil and toss the veggies and cook them on medium for 5-7 minutes until fragrant. Wash and cut the zucchini in small cubes as well and add it to the veggies. Season with salt and pepper and add the stock bringing it to a simmer and add the pesto if using.

Combine the meat with the seasoning and using an ice cream scooper form the meatballs. Gently add them to the simmering soup and poach them for 5-7 minutes until cooked through. Add in the spinach, mix, turn the heat off and cover.

Serve and grate some fresh parmesan on top and add fresh basil as well if you want.
